At Foundation level
The course is taught as three themes:

The Hospitality Industry – you’ll learn about what makes up the industry and visit several hospitality outlets in the area to see how they operate

People in Hospitality – you’ll learn the principles of healthy eating, how to work with colleagues and the general public.

Hospitality Operations –will learn all about food, where it comes from, its cost, how to prepare and cook food. You may prepare and serve a meal for a bistro menu for example.
Additional and Specialist Learning – students will also study a number of additional subjects including GCSE’s, Food hygiene and safety qualification. Students will also research and compile a project of their choosing at the end of the second year - guidance and support will be given in this important aspect of the course.
At Higher Level(equivalent to up to 7 GCSE’s grade A* - C)
The course is taught as four themes:

The Hospitality Industry – you’ll learn how the industry is managed, what makes up the industry and the legislation which governs it.

People in Hospitality – you’ll learn the principles of healthy eating, how to work with colleagues and the general public.

Hospitality Operations –will learn all about food, where it comes from, its cost, how to prepare, cook and serve and understand different diets.

Business and Finance – you will learn some of the basics of financial management – you could for example with your fellow students start a new outlet for food, market it, operate it and calculate whether you are making a profit or loss.
Additional and Specialist Learning – students will also study a number of additional subjects including GCSE’s, Food hygiene and safety qualifications and a Barista Coffee Qualifications. Students will also research and compile a project of their choosing at the end of the second year.
At Advanced level
The course is taught as four themes:

The Hospitality Industry – you’ll learn how the industry is managed, what makes up the industry and the legislation which governs it. You will learn about how the industry thrives on fresh ideas. You may investigate a local employer’s food service outlet and suggest ways it can be improved.

People in Hospitality – You will investigate how attitude is central to customer services. You will work in a hospitality outlet to ensure excellent customer services, investigate customer comments procedures. These personal skills are developed further through the levels, and at this level includes establishing the importance of teamwork among the various hospitality functional areas and dealing with managing people to maximise their impact on customers.
- Hospitality Operations –The theme introduces you to the operational functions and management of hospitality establishments, including how the different functional areas work together to provide effective customer service. This very practical theme has a central focus on meeting customer needs, particularly in the preparation and serving of customer meals.
- Business and Finance – At this level the theme further develops your understanding of the financial aspects of the industry and how effective budgetary planning, financial control and promotion of the business are vital to the success of any hospitality establishment.
Additional and Specialist Learning – students have the option to study a number of additional subjects including a choice of A levels, Food hygiene and safety qualifications as well as a number of vocational qualifications. Students will also research and compile an extended project of their choosing during the second year.
